1-min Polenta!

I've just discovered 1-min polenta. Not the kind from the supermarket that says it takes 20-30 mins of stirring to cook, but the stuff from European fruit shops or delis that takes only 1 minute to cook. One I have just requires the water to be boiled and the polenta to be stirred in. It makes a thick corn sludge immediately, which is perfect to serve as the carbs with chilli con carne. Haven't tried it on a bushwalk but I'm pretty sure it would be a winner. Add grated cheese for more flavour.

  1. Hi marcelle, great camping food. Think I read you were in victoria, oz?? Places to get those butter portions you want would be and restaurant dry goods suppliers like PFD, Campbells cash and carry (need a ABN), Bidvest, Barwon foods (geelong) etc. They are called PC (portion control) butters and come in foil or plastic tubs- Devondale definitely do tubs, weston star foil/ maybe tubs as well. They also do jams, honey vegemite, peanut butter. If you don't have a Kryvac machine its a brillent investment for around $300 check out the packaging centre and get a TPC 320V. I am making camping survival food (I'm a chef)and find the machine invaluable. Thanks for your advice. Charlie

  5. You can shape the polenta into a slab too and then fry it for more calories and flavour. If you add oil and a stock cube to the boiling water this makes it more flavoursome too. Another find is corn-based couscous. Good for us gluten-free diet folks. It's actually tastier than ordinary wheat couscous and quite different from polenta.
